A Happy Ending at Publix?

I wanted to make a home cooked family meal tonight since it is finals week. I would rather have others focused and concerned with their studies, than what they are going to do for dinner. Plus I feel like the Energizer Bunny right, I may as well put this energy to good use.

I was shopping at Publix today trying to decide on what to make. I went through the recipes that Publix offers and found something that sounded appealing: Meatloaf. Usually I make an upside down Meatloaf, but I wanted to try out a different recipe. Hopefully this was a happy finding at Publix that will make my book.

Meatloaf Recipe

Ingredients:
1 1/2 lb ground beef
2 eggs
1/2 C onion (chopped)
2 T Italian seasoning
1/2 C bread crumbs (gluten-free)
1 C tomato sauce

Directions:

1. Preheat oven to 350F. Combine ground beef, eggs, chopped onion, Italian seasoning and bread crumbs in medium bowl and mix until well blended. Place in loaf pan.
2. Bake 35-40 minutes or until internal temperature reaches 160F. Remove from oven and top with tomato sauce.

Sometimes you just have to switch things up and try something new.
I will post my upside down Meatloaf recipe soon. I know that one has always been a hit.

Flour: Substitute for my Substitute

In the beginning what I found difficult was that there really was not a good all purpose flour being sold in the stores (now there seems to be different brands being made). That is why I decided to make it from scratch. That way I could make the perfect blend. Which is exactly what I did.

It took me about three different all purpose flour recipes until I found the perfect mix. Unfortunately, I seemed to have misplaced that recipe, but this recipe seems to be very close:

Ingredients:
2 C rice flour (brown rice)
1/3 C tapioca starch
2/3 C potato starch
1 t xanthan gum

Directions are simple and fast:
Combine all ingredients into a bowl and blend.

**Now you are able to take a recipe that calls for flour, you can substitute it with this recipe instead. It should taste no different.**

Recipe of the Day: Stuffed Zucchini

Personally, I have not yet made this, but I do plan on doing so either tonight or tomorrow. It seems to be light, yet filling. It also received 4 1/2 star rating.

3 zucchini
1 pound pork sausage
1 C dry bread crumbs (gluten-free)
1 clove garlic, minced
1 (32 ounce) jar spaghetti sauce
1/2 C grated Parmesan cheese
1/2 C shredded Mozzarella cheese

Directions

1.Preheat oven to 350 degrees F (175 degrees C).
2.Trim stems from zucchini and slice lengthwise. Scoop out seeds and put in bowl. Mix seeds with sausage, garlic, bread crumbs, and parmesan cheese. Stuff squash with sausage mixture and place in 9×13 inch baking pan. Pour sauce over squash and cover pan with foil.
3.Bake in preheated oven for 45 minutes, or until sausage is cooked. Remove foil and cover with mozzarella cheese. Cook until cheese is melted.

Ideal Restaurant

Going gluten free is not that easy, especially when you go out to eat. One restaurant that is ideal for anyone that wants to stick to their diet was a place that I happen to have accidentally found. It is in Orlando. The Yachtsman Steakhouse. Whenever I go out to restaurants they typically bring out chips or bread that is very tempting to “cheat”. Which is what happened at Yachtsman Steakhouse. They brought out bread, but when gluten free was brought up our waitress said they do offer gluten free bread freshly made. They brought out within minutes, hot and fresh. I was in heaven. I plan to go back in the near future.
